¾ cup (175mL) 
10% cream
1 tsp (5mL) 
vanilla extract
¾ tsp (3mL) 
nutmeg, divided
¾ tsp (3mL) 
cinnamon, divided
4 cups (1L) 
peeled, cored and diced Empire apples
1/3 cup (75mL) 
brown sugar
2 tbsp (30mL) 
lemon juice
½ cup (125mL) 
mascarpone cheese

Whisk together eggs, cream, vanilla, ¼ tsp (1 mL) cinnamon and ¼ tsp (1 mL) nutmeg in a medium bowl. Set aside.

Prick pitas all over with a fork on both sides and place in a single layer in a rectangular pan. Pour egg mixture over the pitas. Cover and refrigerate for at least 1 hour.

Remove pitas from pan and place on a baking sheet lined with parchment paper.

Bake uncovered for 10-15 minutes, turning over halfway, until golden brown. Meanwhile, combine apples, remaining cinnamon and nutmeg, brown sugar and lemon juice in medium-sized pan. Cook over medium heat until apples are tender, remove from heat. Set aside.

Remove pitas from oven. Divide and spread each pita with mascarpone cheese. Top with apple compote and serve immediately.
