Loaf sliced bread - dried overnight on a rack
Slices MAPLE LEAF® Bacon, finely chopped
1 (15) 
Onion, finely chopped
Stalk celery, finely chopped
1 tbsp (15mL) 
Eggs, lightly beaten
1 tbsp (15mL) 
Finely chopped fresh herbs (parsley/sage/thyme)
1 ½ cups (375mL) 
Low sodium chicken broth

PREHEAT oven to 400ºF (200ºC).

BREAK dry bread slices into bite size pieces and place in a large bowl.

FRY bacon on medium high heat until crisp, add onion, celery and butter. Sauté for 5 minutes. Set aside.

ADD eggs, herbs, chicken stock and slightly cooled bacon/vegetable mixture to the bread. Mix well.

Spoon stuffing into a lightly greased 9x5-inch (2 L) loaf pan and bake at 400ºF (200ºC) oven for 45 minutes.

REMOVE pan from the oven, invert onto a serving plate, slice and serve.
