Dempster’s®/POM® Original 7 in. Tortillas
1 lb (500g) 
halibut, cod or tilapia fillets
½ tsp (2mL) 
each salt, cayenne pepper
2 tbsp (30mL) 
oil, divided
½ cup (125mL) 
sliced red peppers
½ cup (125mL) 
corn niblets (frozen or canned)
¼ cup (50mL) 
thinly sliced red onion
¼ cup (50mL) 
chopped cilantro
Zest of half a lime
2 tbsp (30mL) 
lime juice
Cracked black pepper

Season fish with salt and cayenne.

Heat half of the oil in skillet over medium-high heat. Cook fish just until golden and opaque and flakes with a fork, about 3 minutes per side.

Combine red peppers, corn, red onion, cilantro, lime zest, lime juice and remaining oil.

Divide vegetables over pitas and top with fish.

Serve with spicy mayo if desired.
