2 ½ cups (625mL) 
2 tbsp (30mL) 
Margarine or butter
1 tsp (5mL) 
1 tsp (5mL) 
Instant coffee
½ cup (125mL) 
Pinch Salt
1 ½ cups (375mL) 
Fruit (apple OR berries OR banana), sliced OR
1 cup (250mL) 
Raisins OR
1 cup (250mL) 
Chocolate chips

PREHEAT oven to 350°F (180°C). Boil a pot or kettle of water.

BREAK bread into large chunks and place evenly in an 8 inch (20 cm) square ovenproof baking dish.

POUR milk into a medium saucepan; add margarine, cinnamon, instant coffee, sugar and salt.

HEAT above mixture on medium-low heat, stirring constantly until milk is steaming. Do not let the mixture boil.

WHISK eggs in a large bowl; stir in a small amount of hot milk mixture, stirring constantly to keep from curdling. Do this until half of the milk has been added to the eggs and pour all egg mixture into saucepan.

POUR milk mixture over the bread, gently pressing down with a spatula.

PLACE baking dish into a larger pan in the pre-heated oven. Make a water bath by pouring boiling water (from step 1) into the outside pan until water is half way up the sides of the baking dish.

BAKE for 45-60 minutes or until the centre of pudding is set. Remove inner pan carefully from the water bath and cool slightly before serving.

TIP: serve warm with vanilla ice cream or a dollop of whip cream.
