Butter Bacon Baby Bok Choi

Strips MAPLE LEAF® Bacon, cut into ¼-inch (5 mm) pieces
2 tbsp (30mL) 
Red Chili Flakes (optional)
½ lb (250g) 
Baby Bok Choy, washed and halved

COOK bacon in a wok or large non-stick skillet over medium-high heat until crisp, about 5 minutes. Remove bacon with slotted spoon and set aside leaving rendered fat in pan.

ADD butter and red chili flakes to pan. Add bok choy and cook until tender crisp, about 2 to 3 minutes. Using a slotted spoon or tongs remove bok choy.

TOSS bok choy together with bacon and serve immediately.
