2 tbsp (30mL) 
Vegetable oil, divided
(1) 
Small onion, sliced
 
1/2 Large red pepper, thinly sliced
(2) 
Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into ½ inch (1 cm) cubes
(1) 
(200 mL) package Olivieri® Butter Chicken Sauce
(2) 
Pieces naan bread
 
1/2 Large mango, cut into ½ inch (1 cm) cubes
2 tsp (10mL) 
Fresh cilantro, finely chopped


Directions
PREHEAT oven to 425°F (220°C). HEAT 1 tbsp (15 mL) oil in a fry pan on medium-high heat. Add onion and pepper and sauté for 3 -4 minutes. Remove and set aside. HEAT remaining oil in same fry pan on medium heat. Add chicken and cook for 3 minutes. Increase heat to medium-high, add sauce and heat for 2 minutes or until internal temperature of the chicken reaches a minimum of 170ºF (77ºC). PLACE naan bread on baking sheet and top each with chicken and sauce, onion and pepper mixture, mango and chopped cilantro. Bake in preheated oven for 6-8 minutes.
