MAPLE LEAF Prime™ Naturally® Boneless Skinless Chicken Thighs
slices DEMPSTER’S® white or brown bread
1 tbsp (15mL) 
Chopped fresh basil
Garlic clove, minced
2 tbsp (30mL) 
Parmesan cheese
2 tbsp (30mL) 
Olive oil
2 tbsp (30mL) 
All-purpose flour
Eggs, lightly beaten
 
Salt and pepper to taste
 
Vegetable oil for frying


Directions
PLACE chicken thighs between two sheets of plastic and flatten with a meat mallet or rolling pin to an even ¼ inch (5 mm) thickness.

COMBINE bread, garlic, basil, cheese and olive oil in food processor. Process to blend thoroughly.

SEASON chicken thighs with salt and pepper. Dip into flour, then beaten egg, then finally in the breadcrumbs to coat thoroughly.

HEAT a thin layer of oil (approx. 2 tbsp or 30 mL) in a large non-stick skillet to medium-high. Place four of the breaded chicken thighs into the pan. Cook until golden on both sides (approx. 3-5 minutes per side), remove from the pan and drain on paper towel.

REPEAT with remaining chicken and serve. Heat may need to be lowered for cooking second batch of chicken.

TIP: Pair this dish with pasta and tomato based sauce of your choice or home fries and a green vegetable.
