Chilled Tomato and Herb Sweet Pepper Soup

Olive oil

Onion, finely chopped
Garlic cloves, minced
1 (300mL) 
Jar roasted red peppers
2 cups (500mL) 
Chicken stock
1 (600mL) 
Tub OLIVIERI® Tomato & Herb Sauce
1 tbsp (15mL) 
Basil, chopped (about 6 leaves)
1 tbsp (15mL) 
Balsamic vinegar
Salt & pepper to taste
2 tbsp (30mL) 
Fresh chives, snipped
1 tbsp (15mL) 
Croutons (optional)

PLACE oil, onion and garlic in a pot. Cook over medium heat until onions are translucent (do not brown).

STRAIN liquid from roasted red pepper jar.

ADD peppers, chicken stock and Tomato & Herb sauce to pot. Bring to a boil, reduce heat and simmer for 5 minutes.

REMOVE from heat and puree with a hand or table blender.

STIR in basil and balsamic. Season to taste.

CHILL for 2 hours in refrigerator.

SERVE soup garnished with snipped chives and croutons.

TIP: This soup can also be served hot and tastes great served with a Dempster’s® OvenFresh™ baguette or roll.
