Cider Braised Chicken, Apple and Sweet Potato

Brown sugar
Onion, cut in large chunks
Red Gala apple, cored and cut into thick slices
Large sweet potato peeled and cut in ½ inch (1 cm) thick sticks
1 tbsp (15mL) 
1 tbsp (15mL) 
Vegetable oil
½ cup (125mL) 
Apple cider or juice
1 tbsp (15) 
Maple syrup

PREHEAT oven to 375°F (190°C).

MIX together salt, pepper, cinnamon, ginger and sugar. Rub mixture into chicken and toss remainder with onion, apple and sweet potato.

HEAT butter and oil in fry pan over medium heat. Add apple and vegetables and pan-fry for 3-4 minutes or until lightly browned. Remove from pan and place in a 9x13-inch (3.5 L) baking dish.

PAN-FRY chicken breasts until golden brown, 2-3 minutes per side. Remove from pan and place on top of apple mixture.

ADD cider and maple syrup to fry pan; bring to a boil scraping up any juices left in pan. Pour over chicken. Cover with foil and place in preheated oven for 20 minutes. Remove foil; baste chicken with juices and cook, uncovered an additional 5 minutes. Check internal temperature of chicken has reached a minimum of 170°F (77°C) before serving.
