box Maple Leaf Prime® Roasted Red Pepper, Goat Cheese and Basil Chicken Scaloppini Folds
Small English cucumber
1 tbsp (15mL) 
Chopped fresh chives
1 tsp (5mL) 
White wine vinegar
½ tsp (2mL) 
Lemon zest
1 tbsp (15mL) 
Lemon juice
1 tsp (5mL) 
Orange zest
2 tbsp (30mL) 
Orange juice
2 tbsp (30mL) 
Olive oil
1 ½ cups (375mL) 
Mixed baby greens
1 ½ cups (375mL) 
Frisée lettuce, torn
½ cup (125mL) 
Fresh raspberries
½ cup (125mL) 
Orange segments
 
Coarse salt and pepper to taste


Directions
ARRANGE Prime® Roasted Red Pepper, Goat Cheese, and Basil Chicken Scaloppini Folds on a baking sheet and bake according to package directions.

DICE the cucumber and set aside in a large bowl.

WHISK chives, vinegar, citrus zest and juice together in a small bowl. Slowly drizzle olive oil into the bowl while continuing to whisk until dressing starts to emulsify. Set aside.

TOSS the diced cucumber with the salad greens, raspberries, orange segments and dressing. Sprinkle with coarse salt and pepper to taste.

SERVE and enjoy.
