Ingredients
Strips MAPLE LEAF® Bacon, cut into 1/8-inch (3 mm) slices
Baking potatoes, washed
4 tsp (20mL) 
Olive oil
4 tsp (20mL) 
Vegetable or canola oil
 
Salt and Pepper
¾ cup (175mL) 
Shredded sharp
Green onions, thinly sliced
 
Sour cream


Directions
PREHEAT oven to 450˚F (230˚C).

COOK bacon in a non-stick skillet over medium heat until crisp, about 5 minutes. Drain on paper towel and set aside.

POKE holes all over potatoes using either a fork or paring knife. Rub with olive oil and place in a microwave safe dish.

COOK potatoes in microwave on HIGH for 5-10 minutes, turning halfway, until soft. Set aside to cool slightly.

CUT potatoes in half and gently scoop out the middle, leaving ¼-inch (5 mm) border. Gently brush vegetable oil on both sides of potato skins and add a good sprinkling of salt and pepper.

PLACE potatoes, skin side down, on a baking sheet and bake for 20 minutes, turning over once.

REMOVE from oven and fill potato skins with cheese and cooked bacon. Place back in oven for 2 to 3 minutes until cheese is melted.

Top with green onion and serve immediately garnished with sour cream.

TIP: Save cooked potato for mashed potatoes, gnocchi or potato cakes.
