package Maple Leaf Prime Naturally® Chicken Breast Fillets, cut into 1-inch (2.5 cm) pieces
¼ tsp (1mL) 
¼ tsp (1mL) 
Ground black pepper
2 tbsp (30mL) 
Vegetable oil
Large onion, thinly sliced
Tomatoes, coarsely chopped
Yellow pepper, cut into ½ inch (1 cm) pieces
¾ cup (175mL) 
Basmati rice
1 tsp (5mL) 
Ground cumin
1 ½ cups (375mL) 
Chicken stock
Chopped fresh parsley or cilantro

SEASON chicken with salt and pepper.

HEAT oil in a large fry pan, add chicken and brown for 2-3 minutes. Remove from pan and set aside. Add onion, tomatoes and peppers to fry pan and sauté for 2 to 3 minutes. Add rice and cumin and mix well. Return chicken to pan and add chicken stock. Bring to a boil, reduce heat, cover and simmer until all stock is reduced and rice is cooked, approximately 15 to 20 minutes.

FLUFF with a fork and top with parsley before serving.

TIP: For a spicier flavor profile add a dash of hot sauce or ½ tsp (2 mL) finely chopped fresh chili peppers.
