Maple Leaf Prime Naturally® Boneless Skinless Chicken Breast
¾ cup (175mL) 
Plain yogurt, divided
2 tsp (10mL) 
Curry powder
Salt and pepper
½ cup (125mL) 
Finely diced cucumber
1 tbsp (15mL) 
Coarsely chopped fresh mint
1 cup (250mL) 
Baby spinach leaves

CUT chicken into strips and combine with yogurt, curry, chicken, salt and pepper in a small bowl. Cover and let stand 1 to 3 hours.

PREHEAT oven to 400°F (200°C) and place chicken on baking sheet lined with parchment paper or aluminum foil.

BAKE in oven for 10 to 15 minutes or until the meat reaches an internal temperature of 170˚F (77˚C). Meanwhile, combine remaining ½ cup (125 mL) plain yogurt, cucumber and mint in a small bowl. Set aside in refrigerator.

WRAP tortillas in foil and place in oven to warm for last 5 minutes while chicken is cooking.

PLACE chicken and spinach on top of tortillas. Fold up bottom then roll from sides. Secure with a toothpick.

SERVE with yogurt sauce.
