Box Maple Leaf Prime® Asparagus & Aged White Cheddar Chicken Scaloppini Folds
2 tbsp (30mL) 
Butter
1 tbsp (15mL) 
Olive oil
Shallot, finely diced
Clove garlic, minced
2 cups (500mL) 
Fresh Crimini mushrooms, halved
1 cup (250mL) 
Fresh Oyster mushrooms, torn into bite size pieces
1 cup (250mL) 
Fresh Shitake mushrooms, stems removed and sliced
1 tbsp (15mL) 
Chopped parsley
1 tbsp (15mL) 
Lemon juice
1 tsp (5mL) 
Lemon zest
2 tsp (10mL) 
Chopped chives
 
Salt and pepper to taste


Directions
ARRANGE Prime® Asparagus & Aged White Cheddar Chicken Scaloppini Folds on a baking sheet and bake according to package directions.

HEAT butter and olive oil in a large skillet on medium until butter is fully melted.

ADD shallot and garlic and sauté for two minutes or until shallot is transparent. Add mushrooms, parsley, lemon juice, lemon zest and toss well with garlic mixture.

SAUTÉ the mushroom mixture stirring for 8 to 10 minutes or until mushrooms are cooked and lightly golden. Remove from heat and toss with chives. Serve and enjoy.
