German Style Warm Potato Salad with Bacon

Baby Red Potatoes, washed and halved
Clove garlic, minced
3 tbsp (45mL) 
Olive Oil
2 tsp (10mL) 
White wine vinegar
1 tbsp (15mL) 
Dijon mustard
1 tsp (5mL) 
¼ to ½ tsp (1 to 2mL) 
Cayenne pepper
Strips MAPLE LEAF® Bacon, cut into ¾-inch (2 cm) pieces
8 to 10 
Sprigs thyme, chopped
¼ cup (50mL) 
Chopped parsley
Salt and pepper

COOK potatoes in a large pot of boiling salted water for 10 to 12 minutes or until cooked through.

COMBINE garlic, olive oil, vinegar, mustard, paprika and cayenne pepper in a large bowl, Set aside.

COOK bacon in a non-stick skillet over medium heat until crisp, about 5 minutes. Remove bacon with a slotted spoon. Add fat from skillet to garlic mixture, stirring to combine.

DRAIN potatoes and toss with garlic mixture. Add cooked bacon, thyme and parsley. Toss to combine and season with salt and pepper.

TIP: Increase or decrease the amount of cayenne pepper for more or less heat.
