Grilled Chicken and Blue Cheese Linguini

Package MAPLE LEAF Prime™ Dijon Mustard and Herb Marinated Chicken Breasts
1 (350g) 
Package OLIVIERI® Linguine
4 cups (1L) 
Baby arugula
1/3 cup (75mL) 
Light olive oil
1/3 cup (75mL) 
Blue cheese, crumbled
½ cup (125mL) 
Toasted walnuts, chopped
½ cup (125mL) 
Prepared roasted red peppers, chopped
¼ cup (50mL) 
Fresh parsley, coarsely chopped
2 tsp (10mL) 
Lemon zest
Black pepper to taste

PREHEAT grill to medium-high, grease lightly.

GRILL chicken, turning as necessary, about 15 minutes or until juices run clear when pierced with fork and the internal temperature of the meat reaches 170˚F (77˚C).

TENT chicken with foil; let sit for 5 minutes. Chop half of chicken into bite-size pieces. Thinly slice remaining chicken. Meanwhile, cook linguine for 3 minutes in a large pot of salted water.

TOSS chopped chicken with hot linguine, arugula, olive oil, blue cheese, walnuts, peppers, parsley and lemon zest until well combined. Sprinkle with pepper.

TRANSFER to serving bowl; fan remaining chicken slices over pasta and serve.
