2 tsp (10mL) 
Canola Oil

Onion, diced
½ cup (125mL) 
Thinly sliced red pepper
½ cup (125mL) 
Thinly sliced yellow pepper
Large Maple Leaf Prime Naturally® Boneless Chicken Breast, cut into strips
2 tsp (10mL) 
Mild curry paste
¼ cup (50mL) 
Mango chutney
½ cup (120mL) 
Diced mango, fresh or frozen
¼ cup (50mL) 
Orange juice
1 cup (250mL) 
Cooked rice


Directions
HEAT oil in a frying pan over medium-high heat and add onions, peppers and chicken.

STIR FRY contents in frying pan until chicken is cooked, approx 5-8 minutes.

ADD curry paste and cook for 1 minute; add chutney, mango and orange juice, cook for 1 minute.

SERVE over cooked rice.
