Strips MAPLE LEAF® Bacon Portions™ Bacon, cut into ¼-inch (5 mm) pieces
1 ½ cups (375mL) 
¾ cup (175mL) 
All purpose flour
1 tbsp (15mL) 
Baking powder
1 tsp (5mL) 
Eggs, yolks and whites separated
¼ cup (50mL) 
Maple syrup
2 tsp (10mL) 
½ cup (125mL) 
Melted butter
1 ½ cups (375mL) 
Cooking Spray

COOK bacon in a large pan over medium heat until crisp, about 5 minutes. Drain and set aside.

SIFT together cornmeal, flour, baking powder and salt in a medium bowl.

MIX together egg yolks, syrup, vanilla, melted butter and buttermilk in a separate large bowl.

BEAT egg whites with a hand mixer until they hold peaks.

ADD flour mixture to egg yolk mixture and stir just until combined. Gently fold in beaten egg whites and bacon.

SPRAY waffle iron with cooking spray. Ladle in batter and cook until golden brown.

SERVE immediately with butter, warmed maple syrup and a side of extra bacon.

TIP: Make pancakes with this batter, if you do not have a waffle iron.
