Mushroom and Sausage Breakfast Patty Shells

Package Tenderflake® Patty Shells
2 tsp (10mL) 
Olive oil, divided
MAPLE LEAF® Fully-Cooked Sausages, cut into ½-inch (1 cm) pieces
1 cup (250mL) 
Sliced mushrooms
Green onions, sliced
½ cup (125mL) 
Shredded Cheddar cheese
Eggs, lightly beaten

PREPARE patty shells as per package directions.

HEAT 1 tsp (5 mL) oil in a medium fry pan, add sausages and mushrooms. Cook over medium heat for 2 to 4 minutes. Add green onions, and cook for 2 to 4 minutes more until mushrooms are golden. Remove from heat and set aside.

HEAT remaining oil in a medium pan over medium heat. Add eggs and cook, stirring frequently until eggs are set.

FILL cooked pastry shells with scrambled eggs and sausage mixture.

SERVE topped with Cheddar cheese.
