Open Chicken Quesadillas

Cloves garlic, minced
Medium onion, chopped
Small sweet red peppers, diced
1 ½ lbs (750g) 
Ground chicken
1 tsp (5mL) 
Dried oregano leaves
¼ tsp (1mL) 
¾ cup (175mL) 
Prepared tomato pasta sauce
2 tbsp (30mL) 
Chopped fresh cilantro or parsley
DEMPSTER’S®/POM® White or Whole Wheat Tortillas
1 ½ cups (375mL) 
Shredded Monterey Jack cheese

PREHEAT oven to 400°F (200°C).

HEAT oil on medium-high heat in a large non-stick fry pan. Add garlic, onion and peppers. Sauté 5 minutes.

ADD chicken and seasonings. Cook, stirring occasionally until chicken is no longer pink, about 5 to 7 minutes.

ADD tomato sauce and cilantro, stirring to heat through.

PLACE tortillas in single layer on a baking sheet. Pile 1/6 of chicken mixture on each tortilla, leaving a 1/2-inch (1 cm) border. Top with grated cheese.

BAKE in preheated oven 8 to 10 minutes or until crust is crisp and cheese is melted. Serve with salsa.

TIP: Add sliced hot peppers, sliced black olives or hot sauce to taste. You can also use ground beef or turkey.
