Olive oil
1 ½ tbsp (22mL) 
Prepared pesto
Small red pepper, sliced
½ (0.5) 
Sweet onion, sliced
DEMPSTER’S® Whole Grains™ Ancient Grains™ 10 inch/25 cm Tortillas
4 tbsp (60mL) 
Sour cream
1 tsp (5mL) 
Chopped fresh mint
¼ (0.25) 
Seedless cucumber, sliced
4 tbsp (60mL) 
Crumbled Feta cheese

HEAT oil in medium fry pan over medium heat. Add chicken and fry for 1-2 minutes each side until lightly browned. Add pesto and continue cooking for an additional 5-6 minutes or until chicken reaches a minimal internal temperature of 170ºF (77ºC). Remove from pan and keep warm.

ADD peppers and onions to same fry pan and sauté for 2 to 3 minutes.

MIX sour cream with mint and spread in centre of each tortilla. Top with chicken, peppers, onions, cucumber and Feta cheese. Roll up and serve immediately.

TIP: Substitute mint with 1 tbsp (15 mL) chopped fresh cilantro.
