Red onion, thinly sliced
1 tsp (5mL) 
Finely chopped fresh thyme or parsley
½ cup (125mL) 
Ready prepared raspberry vinaigrette dressing, divided
8 cups (2L) 
Romaine lettuce, washed and drained
2 cups (500mL) 
Baby spinach leaves
½ (0.5) 
English cucumber, halved lengthwise and thinly sliced
1 (400g) 
Package MAPLE LEAF Prime Naturally® Fully Cooked and Sliced Chicken Breasts
1 cup (250mL) 
Fresh raspberries
½ cup (125mL) 
Sliced almonds, toasted


Directions
COMBINE red onion, thyme, and ¼ cup (50 mL) of raspberry vinaigrette in a small bowl; set aside.

TEAR romaine into bite-sized pieces and place in a large serving bowl.

ADD spinach, cucumber, chicken, red onion mixture, raspberries and almonds. Toss with the remaining raspberry vinaigrette just before serving.

TIP: Serve this salad with 1 diced avocado and some cottage cheese for healthy fats and added protein.
