Olive oil
¼ cup (50mL) 
Coarsely chopped onion
¼ cup (50mL) 
Coarsely chopped celery
¼ cup (50mL) 
Coarsely chopped red pepper
¼ cup (50mL) 
Coarsely chopped carrot
1 cup (250mL) 
1 ¾ cups (425mL) 
Low sodium chicken or vegetable broth
Salt and pepper
Toasted sliced almonds

HEAT a medium pan over medium-high heat and add dry quinoa, stirring frequently for 3 to 5 minutes or until golden. Set aside.

HEAT olive oil in a medium pot over medium-high heat.

ADD onion, garlic, celery, red pepper and carrot. Cook until vegetables begin to soften, about 2 to 3 minutes.

ADD chicken broth and allow to boil. Add quinoa and bring back to the boil. Turn heat down to medium and continue to cook, stirring frequently for 15 minutes, or until all the liquid has absorbed.

REMOVE from heat, fluff with fork. Cover and allow to stand for an additional 15 minutes.

SEASON with salt and pepper. Top with almonds and serve immediately.
