English cucumber, grated
1 ½ cups (375mL) 
Plain 1% probiotic yogurt
Tomato, finely chopped
¼ (0.25) 
Red onion, finely chopped
1 tbsp (15mL) 
Fresh mint, finely chopped
½ tsp (2mL) 
Sea salt
½ tsp (2mL) 
Ground coriander seed
Pinch black pepper

DRAIN cucumber juice through a strainer.

POUR yogurt into a bowl and add remaining ingredients; mix well. Refrigerate for 2 hours.

GARNISH with a mint leaf before serving.
