Roasted Red Pepper Hummus Grilled Cheese Pita

Dempster’s® Pocketless Pitas
½ (0.5) 
Container Summer Fresh® Roasted Red Pepper Hummus
½ cup (125mL) 
Shredded Mozzarella cheese
¼ cup (60mL) 
Thinly sliced, ready prepared, roasted red pepper
Small tomato, finely chopped

SPREAD butter on one side of each pita.

SPREAD hummus over unbuttered side of 1 pita. Top with cheese, tomato, roasted red pepper and remaining pita, butter side up, to form sandwich.

PLACE sandwich in a large non-stick frying pan, over medium-high heat. Cook for approximately two minutes on each side, until sandwich is golden brown and cheese is melted. Remove and let cool slightly. Cut sandwich in half or triangles before serving.

Tip: Substitute roasted red pepper strips with chopped Kalamata olives.
