Medium acorn, pepper or buttercup squash, cut into 2 to 3-inch (5 to 7.5 cm) wide wedges
 
Olive oil
 
Maple syrup
 
Salt and pepper
Medium onion, thinly sliced
1 tsp (5mL) 
Chopped fresh sage


Directions
PREHEAT oven to 400˚F (200˚C).

DRIZZLE squash with olive oil, maple syrup and season with salt and pepper. Place in a single layer on a lined baking sheet.

BAKE in preheated oven for 25 to 30 minutes, turning once.

HEAT 1 tbsp (15 mL) olive oil and 2 tbsp (30 mL) maple syrup in a medium-sized fry pan over medium-low heat. Add onions and cook until softened and golden brown, approximately 25 minutes. Add sage and cook for an additional 3 to 5 minutes.

REMOVE squash from oven and top with onion mixture. Serve immediately.
