Rosemary Garlic Chicken Thighs

Maple Leaf Prime Naturally® boneless, skinless chicken thighs
Medium red skinned potatoes, cut into 1-inch (2.5 cm) pieces
2 tbsp (30mL) 
Olive oil
1 tbsp (15mL) 
Chopped fresh rosemary or 1 tsp (5 mL) dried rosemary
Garlic cloves
Pinch cayenne
2 cups (500mL) 
Onion, mushrooms, red peppers, cut into 1-inch (2.5 cm) pieces
Salt and pepper to taste

PREHEAT oven to 400˚F (200˚C).

COMBINE chicken, potatoes, olive oil, rosemary, garlic, cayenne, onion, mushrooms, red peppers, salt and pepper. Spread in a single layer on a large baking sheet lined with either foil or parchment paper.

BAKE uncovered for 20 minutes. Turn chicken and continue to bake for another 15-20 minutes or until chicken has reached an internal temperature of 170˚F (77˚C) and potatoes are tender.
