Loaves DEMPSTER’S® Rye Bread of your choice
Slices cheese (Cheddar, Provalone, Havarti), divided

Assorted lettuce (Arugula, Baby spinach, Romaine), divided
Assortment of fresh herbs, pretzels, olives, small breadsticks, baby dills, sauerkraut, sunflower
Seeds and poppy seeds for decoration

SPREAD a thin layer of cream cheese on the base of a 14-inch (35 cm) square disposable cake board.

SET aside 100 g (3.5 oz) sliced meat and 4 slices of cheese for roof portion of house.

Base of house: REMOVE crust from 15 slices of bread to form 15 rectangles.

PLACE 5 rectangles of bread onto cake board by lining up 3 pieces vertically and 2 pieces horizontally to form a large rectangular base. Spread cream cheese on top of each piece to keep filling in place. Layer with half the sliced meat, 4 slices of cheese and 2 cups (500 mL) lettuce.

REPEAT first layer, spreading cream cheese on both sides of 5 rectangular pieces of bread. Top with remaining 5 rectangular pieces of bread.

Roof of house: CREATE a pitched roof by adding additional layers using remaining meat and cheese. Reduce the size of each layer by leaving a ½-inch (1 cm) border on the front and back of the house. Each new layer will be slightly smaller on the front and back sides than the previous layer and the short sides will remain the same size.

House exterior: CUT an additional 8 rectangular pieces of bread to fit sides of the house. Spread one side of each piece with a generous amount of cream cheese. Press 2 pieces, cream cheese side in, onto each side of base of house.

CUT a further additional 8 slices of bread, removing only the top and bottom crusts. Cut another 2 large slices of bread into large triangles to create the side of the pitched roof. Using a piping bag fitted with a medium-sized tip, generously add cream cheese in horizontal lines onto roof in order to affix the sliced bread.

SPREAD cream cheese onto one side of each piece of bread and dip into a shallow dish filled with poppy seeds. Arrange 2 triangles, poppy seed side out, onto either side of the roof. Arrange remaining 8 slices of bread, poppy seed side out, onto the front and back of roof to create a pitched roof.

DECORATE your house with breadsticks and baby dills secured with cream cheese along edges of house to cover any gaps. Pipe cream cheese along edges and base of house to cover any remaining gaps.

DECORATE house and “yard” with your favourite condiments and toppings such as pretzels to create a fence and windows, olives for the walkway, fresh herbs as trees and sauerkraut to create snow.

TIPS: Save any leftover bread or crust for breadcrumbs or croutons. Substitute regular cream cheese with your favourite flavoured cream cheese. Pipe a ½-inch (1 cm) layer of cream cheese along the border of the cake tray to help secure your pretzel fence.
