Vegetable oil, divided
¾ lb (375g) 
Hash brown potatoes
Small onion, finely chopped
Clove garlic, crushed
MAPLE LEAF® Fully Cooked Sausage Links, cut into ½-inch (1cm) rounds
Slices MAPLE LEAF® Ready Crisp® Bacon, cut into 1/2-inch (1 cm) dice
2 tbsp (30mL) 
Green onions, finely sliced
Red pepper, coarsely chopped
½ cup (125mL) 
Grated cheddar cheese
Salt and pepper to taste
Coarsely chopped parsley

HEAT 2 tsp (10 mL) oil in a large non-stick skillet over medium heat; add hash brown potatoes and cook for 8 to 10 minutes, stirring occasionally.

HEAT remaining 2 tsp (10 mL) oil in a second non-stick skillet over medium heat; add onion and cook until softened; add garlic, sausage, bacon, green onion and red pepper; cook for 2 to 3 minutes.

COMBINE sausage mixture and cheese with potatoes. Season to taste and serve with parsley.
