Spinach and Cheese Ravioli “Puttanesca”

Olive oil
Small onion, chopped
Clove garlic, minced
½ cup (125mL) 
Sliced black olives
Anchovies, finely chopped (optional)
1 tbsp (15mL) 
1 (300mL) 
Tub OLIVIERI® Marinara Sauce
1 (350g) 
Package OLIVIERI® Spinach and Cheese Ravioli
¼ cup (50mL) 
Parsley, coarsely chopped
Grated parmesan

HEAT olive oil in a large skillet over medium heat. Add onions and cook for 2-3 minutes or until onions become translucent.

ADD garlic, olives, capers and anchovies, if using. Cook for an additional 2-3 minutes.

ADD marinara sauce and stir to combine. Reduce heat to low and simmer for 5 minutes. Meanwhile, cook pasta in a large pot of boiling salted water for 4 minutes.

DRAIN and serve ravioli topped with sauce sprinkled with chopped parsley and grated cheese.

TIP: For extra heat, add 1/4 tsp (1 mL) of chili flakes to the sauce.
