Sweet Potato and Black Bean Quesadillas

Large DEMPSTER’S®/POM® 100% Whole Wheat Tortillas
2 tsp (10mL) 
Canola oil
½ cup (125mL) 
Sliced green onion
1 cup (250mL) 
Diced (1/4 inch/5mm) sweet potato
1 tbsp (15mL) 
Chili powder
19 oz (540mL) 
Can black beans, drained and rinsed
1 cup (250mL) 
Salsa of your choice
¼ cup (60mL) 
Chopped fresh cilantro
1 cup (250mL) 
Grated cheddar cheese

HEAT oil in skillet over medium-high heat. STIR IN green onion and sweet potato. COOK 2 minutes. STIR IN chili powder, salsa and black beans. COVER, REDUCE heat and SIMMER for 10 minutes or until sweet potatoes are tender.

DIVIDE mixture between tortillas; TOP with cilantro and cheese. FOLD in half.

TOAST tortillas in skillet until golden on both sides and cheese is melted.

TIPS: SERVE with salsa and low-fat sour cream. TRY replacing the black beans with pinto beans or chick peas
