DEMPSTER’S® BodyWise Whole Wheat English Muffins
Large tomatoes, seeded and diced
Clove garlic, minced
¼ cup (50mL) 
Chopped sweet red pepper
¼ cup (50mL) 
Chopped cucumber
¼ cup (50mL) 
Finely chopped red or white onion
1 tbsp (15mL) 
Finely chopped fresh basil
2 tsp (10mL) 
Finely chopped fresh parsley
1 tbsp (15mL) 
Lime juice
2 tsp (10mL) 
Olive oil
Dash hot pepper sauce
Salt and freshly ground pepper to taste

COMBINE all ingredients except muffins in bowl. Mix well and let stand for approximately 1 hour for flavours to blend.

TOAST English muffin halves. Top each half with bruschetta mixture.

TIP: Try a combination of red and yellow tomatoes. The hot sauce is a matter of taste. You can omit it or increase the amount.
