Frozen peas
1 tsp (5mL) 
Lime zest
1 tbsp (15mL) 
Lime juice
2 tsp (10mL) 
2 tbsp (30mL) 
Vegetable or canola oil
Salt and pepper
4 cups (1L) 
Torn Boston lettuce leaves
2 cups (500mL) 
Spring mix salad greens
½ (0.5) 
Red pepper, thinly sliced
1 (150g) 
Package MAPLE LEAF PRIME® Fully Cooked and Sliced Turkey Breast
Chopped fresh mint

THAW frozen peas in a bowl with lukewarm water for 5 minutes. Drain and set aside.

COMBINE lime zest, juice and honey in a small bowl. Slowly drizzle in oil while whisking mixture to combine. Season with salt and pepper; set aside.

TOSS lettuce, red pepper, peas and dressing in a large bowl. Divide between 2 plates and top with turkey and mint. Serve immediately.
