2 tbsp (30mL) 
Olive oil, divided
Cloves garlic, minced, divided
½ tsp (2mL) 
Dried chili flakes* or more as desired
1 (375g) 
Package Maple Leaf Prime Naturally® Thin Sliced Chicken Breasts
Small red onion, sliced
½ cup (125mL) 
Pitted black olives
½ cup (125mL) 
Cherry tomatoes, halved
2 cups (500mL) 
Baby spinach, packed
1 cup (250mL) 
Radicchio, roughly chopped (optional)
1 tbsp (15mL) 
Chopped fresh basil
2 tbsp (30mL) 
Chopped sun-dried tomatoes
 
Salt and pepper to taste
¼ cup (50mL) 
Grated Parmesan cheese


Directions
COMBINE 1 tbsp (15 mL) olive oil, half of the garlic, and chili flakes in a bowl. Toss chicken with the mixture to coat well.

HEAT remaining olive oil in a large pan on medium high.

BROWN seasoned chicken slices for five to seven minutes, turning halfway through, until no longer pink inside. Remove chicken slices from pan and reserve. Add the remaining garlic, red onions, black olives and tomatoes to the pan and sauté for 5 minutes, or until slightly softened. Add the chicken slices back into the pan.

TOSS the baby spinach and radicchio (if using) into the pan with the chicken mixture. Cook until spinach is just wilted. Season with salt and pepper to taste.

SPRINKLE with Parmesan cheese. Serve and enjoy!

TIPS: Serve over your favorite pasta or rice. Use olives packed in oil and try different types of olives
