Strips MAPLE LEAF® Bacon
1 ½ cups (375mL) 
Brown sugar
3 oz (90g) 
3 squares unsweetened chocolate, chopped
5 oz (150g) 
5 squares bittersweet chocolate, chopped
6 tbsp (90mL) 
Unsalted butter
1 cup (250mL) 
Sugar
1 cup (250mL) 
All purpose flour, sifted
Eggs
½ tsp (2mL) 
Vanilla extract


Directions
PREHEAT oven to 400°F (200˚C).

GRAB a rimmed baking sheet and a wire rack or a broiling pan and line the sheet or pan with foil.

TOSS the bacon in the brown sugar so it’s fully coated and place on the rack. You can press more brown sugar into the bacon once it’s on the rack if you so desire.

BAKE in preheated oven for 20-25 minutes, turning half way, until the sugar is melted and the bacon is fairly crispy. Remove from oven and lower temperature to 375°F (190˚C).

MELT chocolate and butter in a double boiler. Remove from heat and add sugar and vanilla to the chocolate mixture, stir well to combine.

ADD eggs, one by one, mixing each one in completely before you add the next. Add flour and give a good stir to combine.

CHOP bacon into small pieces, but not too small so that it gets lost in the cookie. Mix into the cookie batter.

SPOON rounded teaspoons of batter onto a baking sheet lined with parchment paper.

BAKE cookies in 375°F (190˚C) oven for about 10 minutes. You’ll know they are done when the outsides have hardened slightly, but the inside is still soft.

EXTREME WARNING: CARAMELIZED BACON IS RIDICULOUSLY DELICIOUS. DO NOT EAT IT ALL DURING PREP - YOU NEED IT FOR THE COOKIE!
