Sweet red pepper, diced
1/3 cup (75mL) 
Sweet green pepper, diced
Green onions, sliced
1 cup (250mL) 
Canned kidney beans, drained and rinsed
1/3 cup (75mL) 
Mild tomato salsa
DEMPSTER’S®/ POM® Original tortillas 10 inch
1 1/3 cups (325mL) 
Mozzarella cheese, shredded

MIX peppers, onions, beans and salsa in a bowl. Spread ¼ of mixture on one half of each tortilla.

SPRINKLE with cheese.

FOLD each tortilla in half and place in a non-stick frying pan over medium-high heat.

COOK each quesadilla on both sides until cheese melts and tortillas are lightly toasted, about 3 minutes per side.

CUT into wedges and serve immediately.

Health Tip: For more protein, add cooked chicken or ham to bean filling.

For a more authentic taste, add 1/3 cup (75 mL) chopped fresh cilantro to pepper mix.
