Whole Wheat Tortelloni with Shrimp and Basil

Package OLIVIERI® NutriWise™Whole Wheat Five Cheese Tortelloni
1 tbsp (15mL) 
Olive oil
2 cups (500mL) 
Coarsely chopped baby spinach leaves
1 (300mL) 
Tub OLIVIERI® Alfredo Light Sauce
1 cup (250mL) 
Prepared roasted red peppers, diced
2 cups (500mL) 
Cooked medium shrimp
½ cup (125mL) 
Pine nuts
2 tbsp (30mL) 
Finely chopped basil leaves
½ cup (125mL) 
Shaved Parmesan cheese

COOK pasta in a large pot of boiling salted water for 6-8 minutes. Meanwhile, heat olive oil in a large skillet over medium heat.

ADD baby spinach to skillet and cook for 1 minute or until wilted.

ADD Alfredo sauce, roasted red peppers and shrimp. Stir gently until heated through.

DRAIN pasta, add to skillet and combine.

SERVE topped with pine nuts, basil and Parmesan cheese.

TIP: If using raw shrimp, sauté in a skillet before adding the baby spinach. Add the spinach to the pan when the shrimp begin to change colour.
