How Parma joined Maple Leaf Foods in Quebec
Today, our Laval plant bears the name Maple Leaf Foods Inc., but it began as Parma more than 40 years ago. In 1979, production was devoted solely to Italian charcuterie products, such as prosciuttos, salami, and capicollos, for which Parma is renowned.
Since 2003, we have expanded the products produced at Parma to include fully cooked meat products to meet the needs of restaurant chains, hospitals, schools, and large grocery store deli counters.
Today, Parma is part of Maple Leaf Foods’ specialty meats division, producing fermented and dried salamis.
Dry-cured meat at Parma
We specialize in producing dry-cured products. We utilize drying rooms, where the environment is meticulously controlled to enable the products to slowly and soundly acquire their unique flavours that make them stand out. We never rush the drying process because it is the source of our distinctive quality.
